Last week when I wrote about Broccoli Cheddar Soup, I threatened to make my Broccoli Cheddar Loaf even though I am the only one in my family who likes it.
I still had so much leftover broccoli leftover that I decided to make it. I figured since Alex was at her Dad’s I could eat half of it and then freeze the rest of it.
This recipe comes from Vegetarian Times, which I used to subscribe to.
This recipe is one that I don’t really change. I have learned after making it a couple of times that it can be too soft and mushy. I find it’s better to combine 1/2 cup of water with the onions and to use 2 eggs rather than 3. I also don’t use low fat cheese because I rarely have it on hand and, obviously, I used fresh rather than frozen broccoli. This recipe isn’t that high on calories anyway so I don’t think it’s a big deal and it’s not like I’m about to eat the entire loaf in one sitting.

This is a vegetarian version of meatloaf. It is, however, nothing like meatloaf, which, to me, is a good thing because even before I was a vegetarian I didn’t like it. You do need to actually like broccoli to like this recipe. And if you are fussy about consistency you might not like it.
Meatloaf is gross.
I am at a loss however since I am not a fan of the Broc.

Hi Kim – This looks really yummy! Since I’m a carnivore, I would use this as a side instead of a main dish. It’s amazing that you can actually slice it – appears more like a casserole, or as we say in Minnesota “hot dish.”

but it slices like a loaf. Like meatloaf it falls apart easily.

We got an enormous bunch of broccoli from the farmer’s market – I’ve never seen one so big. Since there is only two of us I had to find creative ways to use it all up.

Hi Vered – I was a terrible cook until I became a vegetarian 10 years ago – then I had to learn if I was going to be healthy. Actually for the first 2 years I was a vegan and I really had to learn to cook properly. :-)

Hi Patricia – Somehow I am oblivious about this e-book – let me look into it and we can absolutely use the recipe. I got it from Vegetarian Times though – is it ok to use their recipe?
I can see making two at a time and throwing meat into one of them ;-) I’m kind of a pain about it though – I tell people that if they want meat they will have to cook it themselves – that ended up making my husband a vegetarian by default ;-)

I am giving credit to the source and hope that will be just fine, because the recipes are to be something you “LOVE” to eat…it is about real food people LOVE to eat and a few words of why…
It does not have to be nutricious….it is food that you love to eat…
the nutritious part comes when we feed children who do not have food or medications.
