Apparently yellow squash is in season because my CSA farm box has been filled with it. And last week the farm couldn’t make their drop offs because of illness, so this week I got double the amount of yellow squash.
Now I like almost all vegetables (which is a good thing since I’m a vegetarian) but I don’t get too excited about yellow squash. I don’t dislike it but I never crave it they way I do with corn, string beans or peas.
Plus the kid doesn’t really care for it. This is odd because she LOVES vegetables. Given the choice between green peppers and french fries, she will choose the peppers. So, I was thinking what am I going to do with all this yellow squash.
I went to my one of my favorite recipe sites, Recipezaar, and typed in yellow squash and cheese. (I also get 8oz of cheese every week and I can’t eat it fast enough so I wanted to use some cheese up too).
I located a recipe for Cheese & Yellow Squash Casserole that uses 5 yellow squash!. (I was going to post the recipe here but it wasn’t clear from the site if I was allowed too, so you’ll have follow the link to check it out). I rarely have all the ingredients listed in a recipe unless I specifically went shopping to make something, but I don’t have a problem making substitutions. For example, this recipe said to add 1/2 stick of butter to the mixture and there was no way I was going to add that much butter. I also didn’t have Worcestershire Sauce or Tabasco so I used extra garlic salt and really hot salsa. (I also made this really early in the morning because it is really way too hot and humid to be making casseroles).
And there is the creation – and it’s very tasty! It kind of looks like Mac & Cheese but I assure you it’s not. I was on a yellow squash quest. Now I’ve got to figure out how I’m going to eat it all – looks like it’s going to be my lunch and dinner for at least three days.

Kim this looks delicious. I’ve never been a big fan of squash either. If I do have it I prefer spaghetti squash served with a little pesto, or some butternut baked with butter. Usually do this in the winter though, because I understand about not wanting to turn the oven on during the summer.

Hi Davina – We talked about the temp in our apartments the other day :-) I made this really early and was still really hot when I was finished.
I like Butternut Squash so much better than Yellow. I was even wondering if I could use yellow squash in a zucchini bread recipe – the kid loves zucchini bread.
If I make it again I will cook it longer and use less bread crumbs – it tastes good but it’s kind of mushy.

I love yellow squash! And zucchini. I just eat it steamed. Nobody in my family will eat it either, I guess it’s the texture?
I had to laugh at needing a way to get through 8 ounces of cheese – oh, the differences between a large and small family. We can eat that in a day!

Hi Tracy – For some reason I like zucchini better. I usually just steam it or stir fry it with other veggies and put in pasta or rice. I just had SO much of it that I wanted a way to use it all at once.
I like cheese but don’t eat much – it’s too salty. The kid only wants yellow cheddar and the farm is giving me better stuff than that. But, yeah, Alex and I don’t go through a lot of food – I think the cats eat more than we do ;-)

Pete has made squash gnocchi or dumplings that are really, really, REALLY good. I think the recipe is on epicurious – if you can’t find it let me know and I will send. Your casserole looks awesome. What would happen if you julienned the squash and made french fries out of it for your daughter? Like Davina, I love spaghetti squash. I never liked squash as a kid because all my mother knew how to do was acorn squash, pureed. We called it “squish.” Now I love that of course, too.

Hi Betsy – lol squish :-) I don’t think I ever ate it as a kid.
I bet Alex still wouldn’t eat it even if I made fries – she’s not that picky but the stuff she doesn’t like she doesn’t even want on her plate. I’m not complaining though – this is the kid who even loves asparagus so she’s allowed to not like yellow squash :-)
If it wasn’t so hot I would have probably made a soup out of it.

Even though I hate squash, this actually looks good. I don’t think I’d try to make anything good out of squash unless I was forced to, though. But when you’re given an abundance of squash, just as with zucchini, you have to get creative. I guess that’s what it was like in the pioneer days — whatever item was up for harvest, that was what you ate.

Hi Dot – It doesn’t seem like anyone is in love with it. I don’t hate it – it just doesn’t get me too excited.
I think it would be better with more veggies in it – it needs more crunch or something.
I’m trying to have the pioneer mindset with the farm box and not waste anything. We can make substitutions but I don’t like being a pain about it .
You know what I hate – tomatoes. People think I’m crazy – but I really don’t like them – or tomato sauce, ketchup, pizza, etc …

I can’t say I’ve ever tried yellow squash or even know what it tastes like but add cheese to anything and it suddenly becomes more awesome.

Hi Jim – lol – It’s true – cheese can make a lot of things more interesting. Cooking was a lot harder when I didn’t eat cheese. I don’t think you would hate yellow squash but I don’t think you would love it either.

Funny, I love peas, beans and corn too but not yellow squash. It’s not something I would every really buy, but the casserole looks and sounds pretty appealing.
And butternut squash – the BEST. Do you like it?
I agree on butter, I usually cut the recommended amount in half.

Butter isn’t my favorite thing. Another thing that kills me in recipes is
stating specific brands. Really? Why do I have to use Cracker Barrel cheese? Is it specially designed for yellow squash casserole ;-)

Yellow squashes :) We don’t get them in our place I guess.. Never seen it here in regular shops.
Yellow squashes and the harvest season reminds me of one of those Winnie Pooh episodes where the rabbit guards his gardenful of squashes to protect it from the (dis)likes of who-else-but-tigger :) It was hilarious though in general I never liked the Winnie-the-Pooh series much.

One of the things I miss about living in a warmer climate is the availability of fresh veggies through a farmer’s market. We have a small window in the summer here in Alaska, but for about 7 months out of the year we are destined to choose from whatever the supermarket has.
The recipe looks great! I’ll give it a try.
